Fried Chicken with Broccoli and Cheese Sauce

Growing up, my all time favorite dish that was served in my house was what my mom called “San Francisco Chicken”. In preparation for posting this recipe, my research came up empty. Meaning, no recipe similar to this one, goes by the name my mom had given it. There are plenty of variations like stir fry, casserole, and even stuffed, but nothing as simple as what I’m about to offer you. None of which are dubbed with “San Francisco” as their title. Go figure! Regardless of the name, this dish is magnificent in all its simplistic and (now) gluten-free glory.

 

Fried Chicken with Broccoli and Cheese Sauce

 

Ingredients

1 lb Chicken Breasts (boneless, skinless; cut into 1 ½ inch strips and pounded slightly thinner)

3 Eggs plus 3 tablespoons Water (whisked)

Gluten Free Flour for dredging (I used Gluten Free Bisquick)

Lemon Pepper Seasoning

Garlic Powder

Chili Powder Blend

Parsley Flakes

Salt and Pepper

1 bag Frozen Broccoli and Cheese Sauce

Oil (for frying)

 

Directions

Pour oil into large frying pan until it reaches about ¼ the way up the side. Heat on medium-high heat.

While waiting for the oil to come to temperature, prepare the chicken.

Season the flour with a generous amount of lemon pepper seasoning, garlic powder, chili powder blend, parsley flakes, salt and pepper and whisk together in a baking dish.

Lightly coat the chicken breasts in the seasoned flour and then dip in the egg wash.

Gently place in the hot oil and fry for 2 minutes or until golden brown. Flip the tenders and fry for another 2 minutes until golden. Remove chicken from the pan and place on a wire rack to allow for any excess oil to drain.

Continue the process until all the chicken tenders are cooked. Remember, you can keep the chicken in an oven set to the “warm” setting (or 200°F) while you finish frying the rest.

When the last batch of chicken tenders are in the pan, microwave the frozen broccoli and cheese according to the directions on the package.

Place the chicken tenders on a plate and cover with the broccoli and cheese sauce.

Serve and enjoy!

One step further:

Yes, I make this a meal in and of itself, but extra side dishes are always a plus!

Try serving the original dish alongside any flavor of mashed potatoes.

Or

Place a bed of rice or fusilli pasta on the plate followed by the broccoli and cheese sauce topped with the chicken.
